Tasting Note
The colour is youthful with vibrant purple hues. The nose has delicate smoky and briar characters with undertones of honey and white peach. Lovely spice and clove characters are also evident. The wine has a soft mouth entry and the acidity herald a rich complex mid palate, with flavours of blackcurrant. The wine finishes with fine tannins, combined with excellent oak and subtle cherry flavours.
Technical Information
The fruit was picked at optimal ripeness and transferred to our winery for vinification. The individual varieties were all vinified and matured separately and only brought together on the blending table. The fruit was destemmed and fermentation took place in Stainless steel, before being transferred to a combination of French and American oak barriques (55% American / 45% French) that were 1-3 years of age. New Oak was avoided, so as not to dominate the fruit & take away from the style of wine we are trying to achieve. The wine was matured for 18 months prior to bottling.
